Unfortuantely, I didn’t have a camera handy tonight so I’m just including the images from the respective Mediterrasian.com pages, but here are the three recipes I made for dinner tonight:

Since I can’t tolerate wheat, I left the torn bread out of the soup recipe and added chili powder. I made this soup yesterday as well, without the chili powder (or bread) and it tasted a little bland. It’s wonderful with the extra little kick though.
I also made the bean salad yesterday, but burned the white beans in the process of trying to pressure cook them, so I left them out, and my sister and I liked it so much that I didn’t bother to add them in today either.
I cooked the mushrooms pretty much according to the recipe (I could only find small to medium mushrooms, so I cooked them whole rather than trying to peel and quarter them). The results are tender and savory!
To drink, we did a variation on our regular Yerba Mate tea, adding in some sweetened cocoa powder. It gave a nice, sweet end to the meal and will probably become our new regular.
If you try any of the other recipes at Mediterrasian.com, please let me know what you think of them. Each one, so far has been rich, filling and surprisingly healthy as well as relatively easy to prepare. Hooray!
